The Holiday Diaries: Three ingredient sticky chicken

I just got back from a week on holiday at Club Mykonos which was incredible! While we were there, I prepared a three-course meal for us which actually went really well. My aim for these dishes were to have dishes which were easy to prepare and not at all time-consuming (I was on holiday after all). After a lot of thought, the three dishes I thought of was sticky chicken wings for a starter, a lemon and prawn pasta for the main course and a gooseberry cheesecake for dessert.

The sticky chicken wings is probably one of the easiest starters you could possibly have. It is not fancy at all and makes a meal feel much more comfortable and not at all too formal- which is what I was going for. These wings were a hit and I will definitely be making them again in the near future.



My morning pick me up

If you are anything like me and you appreciate a good cup of coffee or tea, this is a definite must-read. I am not an avid coffee or tea lover, but there are some days which could be hell to get through without a pick-me-up cup of feel goodness. I was inspired to write this post this morning when I woke up after having only 4 hours of sleep last night. These few weeks before exams and last minute submissions are terrible.

When it comes to instant coffee, my go to has definitely got to be Douwe Egberts South American Style Coffee. This is my HOLY GRAIL of coffees. It is a smooth coffee with a very distinctive taste. Although admittedly on the more expensive side of instant coffees, this is a definite must try if you have never had it.It is not too strong; with just the right amount of strength to get  you going. Douwe Egberts does have weaker and stronger coffees in their range depending on your preference. I would say that this one falls somewhere in between and is a nice compromise between the two ends of the spectrum.


My second go-to coffee is VIP Gold by House of Coffees. It is a medium roast but oh-so good. Because this is a filter coffee, it does take a longer time to prepare but is definitely worth the effort.  I do suggest investing in a french press for your filter coffee. I have been OBSESSED with rose gold for the past few months and so I have splurged a bit on mine, but you could pick one up for about R150.

Although not a coffee, I want to share with you possibly the best chamomile tea I have tried. Woolworths has their own range of teas and a few weeks ago I purchased their Sleep Tight Chamomile tea. I do not regret that purchase at all. So far, I have gone through 2 boxes of this tea which is boarder line ridiculous. My issues with other chamomile teas has always been that I find them too sweet or the fragrance is too overbearing. Whereas with this tea, it is just the right combination of the two.

I have been flying through my stash of coffees and teas lately and I will be trying out new ones very soon especially with winter coming up. So keep warm in the upcoming cold months and enjoy a good cuppa when you need it.

YouTube Chefs who will melt your heart

I spend a lot of time online; especially watching YouTube videos. I love watching the different cooking shows and learning their different techniques and styles of cooking. I want to share with you some of my favourite channels. Hopefully they will inspire you as they have inspired me.


Mushroom, Spinach and Bacon Pasta

I am a pretty lazy cook. I don’t like spending hours in the kitchen preparing and then cooking food. I want to get in and out of there as soon as I possibly can.

My absolute all time favourite dish is anything to do with pasta. And so naturally, I thought it only fitting to share with you one of the most versatile and quick pasta dishes that I know of. Just last week, I prepared this dish at home. I cooked the sauce separately and served it over rice for my dad who does not eat pasta (there’s that versatility I was talking about). But also, the ingredients in this dish are defiantly interchangeable with probably anything you would like to add or take away.  (more…)
